Execution Steps
Prepare the Batter: In a medium mixing bowl, whisk together the flour, cold water (or milk), garlic powder, onion powder, smoked paprika, salt, and black pepper until completely smooth. The consistency should cleanly coat a spoon and resemble pancake batter.
Coat the Cauliflower: Dip cauliflower florets straight into the prepared wet batter, shaking off any excess. For extra crunch, roll each battered piece thoroughly in a shallow bowl of panko breadcrumbs until fully coated before cooking.
Cook Until Crispy: Choose one of the following methods to cook your cauliflower florets until they are deeply golden brown, crispy on the outside, and perfectly tender on the inside:
Heat frying oil to 350°F. Fry the cauliflower florets in small batches for 4–5 minutes, then drain well on clean paper towels.
Arrange the battered cauliflower in a single layer, spray lightly with vegetable oil, and cook at 400°F for 15–18 minutes, flipping halfway through.
Simmer the Buffalo Sauce: Gently melt your unsalted butter in a small saucepan over low heat. Whisk in the Peppajoy hot sauce, honey, garlic powder, Worcestershire sauce, and an optional pinch of cayenne pepper. Simmer for 1–2 minutes until the emulsion turns smooth and glossy.
