- ✓ Juice of 2 Limes
- ✓ 4 cloves Garlic, minced
- ✓ 1 tbsp fresh Ginger, grated
- ✓ 2 tbsp Brown Sugar
- ✓ 2 tsp Soy Sauce
- ✓ 1 tsp Smoked Paprika
- ✓ 2 sprigs fresh Thyme
- ✓ 1 Scotch bonnet or Habanero, chopped (optional)
Execution Steps
Whisk together the Peppajoy Jerk Seasoning, hot sauce, olive oil, lime juice, garlic, ginger, brown sugar, soy sauce, paprika, thyme, and chopped Scotch bonnet (if using) in a medium bowl until it forms a thick marinade.
Rub the prepared marinade thoroughly all over the chicken pieces, making sure to work it underneath the skin where possible. Cover and transfer to the refrigerator to marinate for a minimum of 4 hours, or overnight for the ultimate depth of flavor.
Cook the chicken using one of these methods:
Grill Method (Recommended): Cook over medium heat for 35–45 minutes, turning occasionally until the exterior is deeply charred, sticky, and the interior remains perfectly juicy. Toss pimento wood or allspice berries directly onto the coals if available for that authentic beach-shack aroma.
Oven Method: Bake at 400°F (200°C) for 40–50 minutes. Turn on the broiler during the final 3–5 minutes of cooking to achieve those iconic blackened, crispy edges.
For an optional Quick Island Glaze, combine 1 tbsp honey, 1 tsp Peppajoy hot sauce, and a splash of lime juice. Generously brush this mixture onto the chicken surfaces during the final few minutes of cooking to let it set.
